Simple, easy and delicious made with Mother's Farms All Natural Pumpkin Seed Tortilla Chips.
Start heating refried beans. Heat the peanut oil in a skillet, when hot place the pumpkin seeds in the skillet and heat them till they are brown. Move the browned pumpkin seeds to a food processor with cilantro, lime, cumin and a tablespoon of peanut oil. Process until smooth. Put Pumpkin Seed Tortilla Chips on a pan and cover with refried beans and the pumpkin seed-cilantro mixture. Heat in the oven on broil for a few minutes, take out of oven, crumble Queso Fresco on chips and serve.
